The challenge
This residential care home group embarked on an aggressive acquisition programme but required expert assistance to develop their procurement processes to support this expansion. There was no central purchasing function and each unit chose is suppliers locally. The result was inconsistencies in product quality, increased workload for the finance team and little documented evidence of supplier health and safety accreditation. Menus were inconsistent throughout the estate and there were concerns over the large variance in commodity costs between units.
The solution
With the full support of the FM Manager we undertook a root and branch review of all food and beverage suppliers, with the objective of improving both product quality and financial performance. Since a generic menu was to be introduced throughout the estate, supplier selection, control and service levels were of paramount importance.
The result
The necessary changes were developed and carefully rolled out to the estate. The solution involved a significant reduction of the supply base, improved product quality and consistency, effective due diligence, the introduction of electronic product ordering through epsys as well as significant cost reductions at unit level – all resulting in a reduced workload at centre. The food and beverage review was so successful that the client expanded the review to include medical, chemical and uniform categories all with similar success.
We now undertake scheduled monthly reviews and provide detailed management reports on a daily basis facilitating informed decision making on a real time basis…
